Simple Winning Pasta Salad

New Jewish chef - The Perfect Pasta Salad

Shabbat is considered the most important of all Jewish holidays. It is the day of rest and weekly observance of God’s completion of creation. Starting on Friday night an hour before sunset, it lasts for 25 hours until sunset on Saturday night.

Simple Instructions

The most simple fresh pasta salad, that is always light and refreshing. 

Make this Salad

What you need:

Ingredients:

Red Onion

1/2

1/2 chopped red organic onion

Tomatoes

2 Cups

2 cups halved cherry tomatoes (sungold tomatoes are best)

Orzo Pasta

2 Cups

Cook 2 cups of orzo pasta to al dente

Cucumber

1 and 1/2 Cup

Cucumber Diced

Crumbled Feta Cheese

1/2 Cup

1/2 Cup crumbled Feta Cheese

Oregano

3 Tble

3 tablespoons fresh oregano 

Red Bell Pepper

1/2

1/2 Organic Red Bell Pepper diced


Dressing Ingredients:

Olive Oil

6 Tbs

6 Tablespoons of high quality olive oil

Lemon Juice

3 Tbs

3 Tablespoons lemon juice

Red Wine Vinegar

1 1/2 Tbs

1 and 1/2 Tablespoons of red wine vinegar

Garlic Powder

1/4 Tsp

1/4 Teaspoon garlic powder

Fesh Ground Salt & Pepper to Taste

Freshly ground salt and pepper to taste. 

Step by Step Instructions:

STEP 1

Cook the orzo to package directions with salted water and strain and set aside.

STEP 2

Place the orzo pasta, chopped cucumber, cherry tomatoes, red onion, red bell pepper, Oregano and feta cheese in a large bowl and mix.

STEP 3

Make dressing by mixing together the olive oil, red wine vinegar, lemon juice, garlic powder, salt and pepper. Best method is to shake in a small mason jar.

STEP 4

Poor dressing over pasta mixture and stir. Add additional oregano as garnish.
